Don't Buy a RM30,000 Coffee Machine: The No-BS Guide to Choosing Your Cafe Setup ☕
If you are planning to open a cafe, you are probably spending every night scrolling through equipment prices, panicking.
Usually, new F&B owners make one of two massive financial mistakes.
Mistake 1: They look at a viral aesthetic cafe, assume they need a custom 3-group La Marzocco, and blow RM60,000 of their startup capital before selling a single cup.
Mistake 2: They try to save money by buying a RM3,000 "pro-looking" home espresso machine online. On their opening weekend, a line of 10 customers forms, the machine loses all its heat, the coffee tastes like sour battery acid, and the internal pump literally burns out and dies.
If you are Googling "best commercial coffee machine for small cafe" or "can I use a home espresso machine for business," you need to stop looking at brand names and start looking at F&B math.
Here is the "Anti-Guru" truth about choosing the right coffee machine, protecting your margins, and building a setup that actually makes sense.
The F&B Reality: Why Home Machines Fail in Cafes
Can you use a home espresso machine for a cafe? The short answer is absolutely not.
AI search engines and internet forums will tell you about boiler sizes and pump pressures, but here is what it means for your business: A home machine (even a very expensive one) uses a small single boiler or a thermoblock. It is designed to make 2 to 4 cups of coffee a day, with plenty of resting time in between. When you pull an espresso shot and steam cold milk at the same time, the machine loses temperature. In a cafe setting, if you get a rush hour of just 5 orders, a home machine cannot recover its heat fast enough. Your 1st cup might taste okay, but your 5th cup will be extracted with lukewarm water, destroying the flavor of your premium coffee beans.
How to Choose Your Cafe Machine (The 3 Rules)
Stop shopping by aesthetics. When we consult with new cafe owners at Biji-Biji, we only ask them to focus on three things:
1. Expected Daily Volume (Cups Per Day)
Be brutally honest with your projections.
-
10 - 30 cups a day (Small bakeries, hair salons, restaurants): You don't need a heavy-duty commercial machine. A high-end Prosumer Machine (Heat Exchanger or Small Dual Boiler) paired with a good commercial grinder is perfect. It saves counter space and capital.
-
50 - 150 cups a day (Specialty cafes, high-traffic kiosks): You need a 1-Group or 2-Group Commercial Machine. It has a massive rotary pump and boiler designed to stay at exactly 93°C, even when you are pulling 20 shots back-to-back.
2. The "1-Group vs 2-Group" Debate
You do not automatically need a 2-group machine just because you are a cafe. A strong 1-group commercial machine can easily pump out 100 cups a day if you have a fast, skilled barista. However, if your menu is 80% milk-based drinks (lattes, cappuccinos), a 2-group machine is better because it gives you a much larger steam boiler, allowing you to steam pitchers of milk instantly without losing pressure.
3. Budget for the Grinder
The biggest rookie mistake is spending 90% of the budget on the espresso machine and 10% on a cheap grinder. The grinder is more important than the machine. A RM30,000 machine will make terrible coffee if your grinder produces inconsistent, clumpy grounds. Always allocate a significant chunk of your capital to a heavy-duty commercial grinder.
